Weekly and Monthly Cleaning Checklist Procedures

This checklist is for the weekly and monthly cleaning procedure of your back of house.

    FRONT COUNTER AND DINING ROOM

    Remove all items, clean with Yellow stuff, rinse and sanitize

    Remove all product and trays. Clean all surfaces & shelves with yellow stuff & hot water, rinse and sanitize. Wipe condenser with damp cloth

    * IF APPLICABLE* Clean, rinse & sanitize outside and underneath of machine, snake the brewer.

    Using a duster, dust front, back, top and bottom of all menu signs

    Using hot water and yellow stuff, clean all tables and chairs, use a scrubber if necessary, rinse & sanitize, remove any gum

    Use a duster or dust mop to remove dust, wipe with a damp cloth

    Using a duster or dust mop, remove dust, use a damp cloth to wipe away any debris left behind. Clean and sanitize walls.

    Using blue stuff and a clean cloth or paper towel, clean the inside and outside of all windows and doors, including ledges.

    BACK OF HOUSE

    Soak and scrub all silver bread trays and pans. Allow to airdry

    Use hot water & a green scrubber. Clean the top, bottom & side gaskets on all fridges and freezers

    Remove all items, clean with yellow stuff rinse and sanitize

    Remove all items from shelves. clean, rinse & sanitize the top, bottom, edges of the shelves
